This recipe is intended for patients who have successfully completed the Soft Solid phase and are over eight weeks post-op.

INGREDIENTS

  • 16 oz. shredded rotisserie chicken or canned chicken
  • 1/3 cup plain Greek yogurt (may substitute fat free cream cheese)
  • 2 green onions, chopped
  • 3 tablespoons hot sauce
  • 4 Mission brand “Carb Balance” whole wheat tortillas* (fajita size)

*if you’d like to add veggies, you can use a lettuce wrap or eat over salad greens instead, or can add chopped celery or bell peppers to chicken mixture

 

DIRECTIONS

1.       Mix chicken, Geek yogurt, green onions, and hot sauce in a bowl – amounts may vary depending on how creamy or spicy you want it.

2.       Spread mixture in thin layer onto tortilla. Roll up tortilla.

3.       Cut the rolled tortilla in slices ~2 inches thick.

Makes 4 servings.
