Fajitas

This recipe is intended for patients who have successfully completed the Soft Solid phase and are over 8 weeks post-op.

FajitasINGREDIENTS

  • 1 lbs. of lean meat (chicken, steak, pork) cut into small strips
  • 1 onion cut into strips
  • 1 bell pepper or peppers of your choice cut into strips
  • 1 tbsp. olive oil
  • Lettuce leaves
  • 2 cloves of garlic chopped
  • 1 tbsp. cumin
  • 1 tbsp. chili powder
  • 1 tbsp. oregano
  • Juice from 2 lemons
  • Toppings: salsa, avacado, guacamole, low fat cheese, tomatoes, olives

 

DIRECTIONS

  • In a large bowl mix the meat, onion, garlic, pepper, lemon juice, and spices together
  • Allow to marinate for as long as you wish
  • Heat a large pan on medium, adding the olive oil
  • Cook mixture thoroughly
  • Serve with lettuce leaves
  • Garnish according to taste
