Sarah's Mexican Chicken

This recipe is intended for patients who have successfully completed the Pureed phase and are in the Soft Foods phase.

SalsaINGREDIENTS

  • 1 5oz can chunk white meat chicken drained (larger size can be preferred)
  • 1 can black beans rinsed and drained
  • 1 to 1 1/2 cups salsa (depending on taste)
  • 1 oz Low-fat shredded cheddar or colby cheese
  • 1 tbsp Non-fat Greek yogurt

 

DIRECTIONS

  • Blend chicken, salsa, and black beans in a large bowl.
  • Scoop single serving into a microwave safe bowl.
  • Sprinkle 1/2 to 1 ounce low fat shredded cheddar or colby jack cheese on top and stir.
  • Microwave 1 to 1.5 minutes or until cheese is melted.
  • Top with a dollop of plain Greek yogurt or fat free sour cream & more salsa if you wish.

Serving Size is 1/3 cup for Soft Foods Diet (Week 4 and beyond).
