INGREDIENTS

1-3 lb. whole chicken (or your favorite chicken parts (breast, wing, or thigh)


2 tablespoons salt


4 peppercorns


3 bay leaves


4 large carrots quartered


2 stalks of celery, with leaves, cut into 2-inch pieces


1 large onion cut into large pieces

 

DIRECTIONS

In a large pot, place all the ingredients and cover with water. Bring to a boil over medium heat, skimming the surface to remove fat and debris. Cover pot, reduce heat and simmer for about 90 minutes. Then season to taste with additional salt, pepper, or bouillon.

FOR CLEAR LIQUID PHASE:


Carefully strain and remove chicken and vegetables from the broth. Place the broth in a large bowl and refrigerate. After 1-2 hours, skim the surface of the broth to remove excess fat and debris. Re-heat your individual serving and enjoy!

FOR SOFT FOODS PHASE:


Remove all skin and bones from the chicken. Grind meat in a blender. Place 3-4 ounces of chicken in individual freezer bags or containers. This meat is appropriate for patients who are on Soft Foods and beyond!
