Chilled Shrimp Soup

This recipe is intended for patients who have successfully completed the Pureed phase and are in the Soft Solid stage.

INGREDIENTS shrimp on ice

  • 2 cups fat-free Fairlife milk
  • 1 1/2 teaspoons dry mustard
  • 1/4 packet of Splenda, Stevia, or Truvia
  • 1/2 lb cleaned, peeled, and cooked shrimp
  • 1/2 cup peeled, seeded, and chopped cucumber
  • 1 tablespoon minced chives
  • salt and pepper to taste


  • place all ingredients in a food processor
  • puree until smooth
  • chill for at least one hour prior to serving
  • add salt and pepper to taste 

Makes 6 servings
