Tomato Watermelon Salad

Ingredients:

  • 4-6 large tomatoes cut into cubes
  • 1 personal size small seedless watermelon cut into cubes
  • 1 teaspoon salt
  • ¼ cup extra virgin olive oil
  • 2 tablespoons sherry or balsamic vinegar
  • Crushed black pepper to taste
  • Chopped herbs such as mint or basil optional

Directions:

  1. Combine cut tomatoes and watermelon in a large serving bowl.
  2. Whisk together oil, vinegar, salt and pepper in a small bowl.
  3. Pour the dressing over the tomatoes and watermelon
  4. Sprinkle fresh herbs on top.

*Yield: 6 Servings

Summer Chickpea Salad

Ingredients:

  • 1 can chickpeas drained and rinsed
  • 1 red bell pepper, veined and diced
  • 1 medium tomato diced
  • ½ cucumber peeled, seeded, and diced
  • ¼ cup crumbled Feta cheese (optional)
  • 1 tsp. olive oil
  • 1 tbsp. lemon juice
  • Salt & pepper to taste
  • ½ cup finely chopped parsley

Directions:

  1. Mix all ingredients in a large bowl. Mix gently.
  2. Cover and chill for a few hours for all the flavors to blend.
  3. Serve on a bed of baby spinach or fill into a whole wheat pita bread.

*Yield: 3 Servings

Fruit Yogurt Pops

Ingredients:

  • 2 cups fresh fruit (Any combination of peaches, strawberries & blueberries, bananas, mango etc.)
  • 1/3 cup sugar
  • 1 tbsp. lemon juice
  • 1 cup vanilla yogurt

Directions:

  1. Blend together the fruit, sugar and lemon juice in a blender until smooth.
  2. Pour alternating layers of the fruit puree and yogurt into popsicle molds, and then insert the sticks.
  3. Freeze until the pops are firm, about 8 hours.
  4. For easy removal, dip the bottom of the molds into hot water for a few seconds to loosen the pops.

*Yield: 12 pops
