This recipe is intended for patients who have successfully completed the Pureed phase and are in the Soft Solid stage.

INGREDIENTS

  • 4 salmon fillets (4-6 ounces) *a 6oz raw salmon fillet results in 4oz cooked fillet
  • 1/4 cup diet, sugar-free pineapple juice
  • 2 tablespoons lemon juice
  • 2 tablespoons brown sugar substitute
  • 4 teaspoons chili powder
  • 2 teaspoons grated lemon rind
  • 3/4 teaspoon cumin
  • 1/2 teaspoon salt
  • 1/4 teaspoon cinnamon

 

DIRECTIONS

  • preheat oven to 400 degrees
  • combine pineapple and lemon juice and pour over salmon
  • marinate salmon for one hour
  • combine brown sugar, chili powder, lemon rind, cumin, salt, and cinnamon
  • rub spice mixture on salmon
  • place salmon fillets in a baking dish coated with cooking spray
  • bake for 12-15 minutes
