Asparagus Pepper Salad

Healthy Boiled AsparagusINGREDIENTS

  • 1 lb asparagus, trimmed and cut into pieces
  • 1/2 cup bell peppers, chopped
  • 2 green onions, thinly sliced
  • 1/3 cup Walden Farms Calorie Free Raspberry Vinaigrette dressing
  • 3 tablespoon Trader Joe's nutritional yeast

 

DIRECTIONS

  • Boil water.
  • Add asparagus and boil for 3 minutes.
  • Drain and add to a large bowl.
  • Add peppers and onions and drizzle with dressing.
  • Toss to coat.
  • Cover and refrigerate for 3-4 hours.
  • Sprinkle asparagus with nutritional yeast. Serve and enjoy!
